Thai food has become in recent years one of the world's favorite cuisines. One of the most distinctive aspects of the cuisine is its use of herbs and spices. With regard to the spices, some Thai dishes are very hot, but by no means all of them. The herbs have another function, in addition to providing flavour, in that they all have to varying degrees various medical and therapeutic benefits.

Thailand has a long history, going back to ancient times, of the use of herbs for medical purpose, and this in turn has permeated the ways of cooking and preparing food. Mountain Biking

Mountain biking is a sport increasing in popularity in Thailand, both among Thais and young international tourists. It is an ideal means of touring Thailand’s spectacular natural environment; safe, cheap and fun, and environmentally green. Mountain biking in Thailand is a blend of high-grade exercise and natural, cultural and historical discovery.

The hilly North of Thailand is most suitable for mountain biking. The best time to visit is November to February, when the weather is cooler. A number of companies offer well-organised biking tours, most include guides and, on certain tours, back-up vehicles carrying food and overnight equipment. Bike are also widely available in major tourist destinations, where they can be rented at extremely reasonable rates on a daily basis

Cycle Tours in the Ancient City of Ayutt...
Starting from TAT Tourist Information Centre at the old city hall, the suggested 11.82 km cycling route is flat and paved, passing over a concrete bridge. It is ideal for families and amateurs, and can be enjoyed year-round. Bicycles are for rent at several locations (see below).

Suggested Cycle Tour Itinerary:

1. Start at TAT Tourist Information Centre where bathrooms are available.

2. In the morning, visit ‘Khum Khun Phaen’, a splendid Thai traditional house which is more than 100 years old. Visitors will be fascinated by the uplifting charm of this wooden house as it showcases ancient Thai wisdom and craftsmanship in adapting their accommodations and way of life to suit their natural environment.

3. Pay homage to ‘Phra Mongkhon Bophit’, a gigantic bronze Buddha image sitting in a posture which indicates that the Lord is subduing demons (mara). The statue is 12.45 m tall and the lap size is 9.55 m (Buddha images are measured in terms of the size of the lap). ‘Phra Mongkhon Bophit’ is one of the largest Bhuddha images in Thailand.

4. Visit Wat Phra Si Sanphet. This is the most important and outstanding royal temple of Ayutthaya Kingdom, and is located in the Grand Palace compound. As at Wat Phra Kaeo of Bangkok, royal ceremonies were held at the Temple.

5. Travel back in time in the ruins of the once heaven-like Ancient Royal Palace of the thriving Ayutthaya Kingdom. The Palace was once the greatest and magnificent Grand Palace of Ayutthaya, one of the wealthiest and thriving cities in all of 18th century Asia. The Palace was served as the Kingdom’s royal residence for 417 years. It was razed by the Burmese in 1767 and has been left as a historical ruin. Start from the Outer Palace in which formerly Sanam Luang and Chakkrawat Phaichayon Hall were situated.

6. Continue to the Middle Palace in which Wihan Somdet and Sanphet Prasat Halls are situated. Wihan Somdet Hall was used for coronation and royal tonsure ceremonies, while Sanphet Prasat Hall was for welcoming foreign envoys and visitors. In addition, Suriyat Amarin Hall, a four-gable roof with the faces of the Hindu god Brahman, was sacred chapel which once enshrined the royal corpse of King Narai the Great. In addition, Trimuk Hall, once an intricate wooden pavilion, is located nearby.

7. Continue to the Inner Palace where Banyong Rattanat Hall is located. Formerly known by the name of ‘Phra Thinang Thaisa’, the Hall was built on an island in a pond. Also situated in the same section is Song Puen Hall, used as a Meeting Hall for Councils of State. Next to Song Puen Hall is Chakkrawat Phaichayon Hall which was used to view processions, military practices and performances.

8. The next historical spot is Bueng Phraram, a big lagoon, which marks the site where King U Thong, the first king of Ayutthaya, established his royal Kingdom and built a palace called ‘Wang Wiang Lek’. Visitors will enjoy cycling in the park, passing ‘Phra Thinang Yen’, a royal pavilion which was used to view water plays and performances.

9. Visit Wat Mahathat, which was built according to the traditional belief that a temple housing the holy relics of Lord Buddha should be located in the royal capital city. The Temple was once exhibited Ayutthaya’s superb craftsmanship. Despite severe damage, the Prang, a Khmer-style tower, is still impressive. A very popular photograph site of the Temple is a Buddha head around which the roots of the Bodhi tree have grown.

10. Visit Wat Ratchaburana, which was built in the reign of Chao Sam Phraya for the royal cremation ceremony of Chao Ai and Chao Yi. These two princes were engaged in a war, fighting from elephant’s back, and both were killed. The Temple once housed priceless golden ornaments belonging to the royal family, in the crypts of its principal Prang tower. Unfortunately, a robbery took place, and the Kingdom’s treasures were stolen. Nevertheless, more than 100 kilograms of gold still remain to be exhibited at Chao Sam Phraya National Museum.

11. Predict the future at Wat Thammikarat. The Temple houses a Reclining Buddha built by Somdet Phra Boromtrilokkanat’s queen. She followed a wish she made for her daughter’s recovery from an ailment. Consequently, people visiting the Temple also ask a boon of Luang Po Khao, the Temple’s sacred Buddha image. Then they forecast whether their wish will come true or not by attempting to lift a 10 kg bronze elephant. If you can lift the elephant with just one finger, then it is likely that your wish will come true.

12. Stop at Wat Na Phramen Temple for refreshment from shops at the Temple. Visitors should not miss the Temple’s Ubosot, or central sanctuary, because it is the only piece of Ayutthaya architecture which was not destroyed by the Burmese in 1767. During the invasion, the Temple was chosen as the site from which to fire cannon at the attackers. The Ubosot design is of typical Ayutthaya style, featuring fortress-like walls with no windows, but only thin slits to allow for sunlight and ventilation. Visitors will undoubtedly be impressed by the principle Buddha image, exquisitely decorated in regal attire, which dates from of Ayutthaya Era.

13. Visit the clay pottery community at Klong Sa Bua Village. The route to reach it leads along a tiny road paralleling serene Sa Bua Canal which was once the royal barge route when the kings traveled to the elephant camp. The community has manufactured earthen jars since ancient times.

14. Take impressive photos at Wat Choeng Tha (also called Wat Kosawat), an ancient temple dating back to 1357. Situated on the left bank of Lopburi River opposite Thai Sanom Fort, King Taksin the Great was once studied at this temple during his childhood. Visitors will enjoy taking photos of themselves and their friends crossing a wooden bridge in front of the Temple carrying their bicycles on their shoulders. These will be some of the most attractive photos of this memorable trip.

15. Have lunch at Wat Lokkayasutha. Pay homage to a large reclining Buddha image, which is 42 m long and dates from the middle of Ayutthaya period. The picture of this Buddha image is popularly published by guidebooks around the world. Furthermore, the beautiful floor was covered with tiles from Ban Ko Noi kiln in Sukhothai, which was the most significant pottery manufacture of Thai history, dating back more than 700 years.

Windsurfing has become one of Thailand’s most popular water sports in the last two decades, and it is practiced all over Thailand’s beaches. Wind-surfing is not only exhilarating and an excellent way to get fit, it is also quiet, non-polluting and environmentally friendly It is a sport that enquires dexterity and coordination and also strength.

You can learn to windsurf on all major beaches in Phuket, Samui, Pattaya and Krabi, as well as on islands of Ko Tao and Ko Chang. Once you have mastered the basics, you’ll find boards and sails available everywhere. While you need wind to windsurf, you can get too much of a good thing.

Don’t go out to sea if the weather is threatening to turn stormy. You should wear a life jacket at all times. Beware of boats and swimmers on crowded stretches of water, especially when you are still learning how to handle your board and sail. It is easy to forget about the sun with the wind on your face, but it is especially strong when reflecting off the water all around you. So wear protective sunblock.

Rock climbing in Thailand is practised wherever there are rocks-and even some places where there are not.

Clubs like the Thailand Rock Climbing Federation (Tel: 0 2373 8725, 0 2729 4773), and the Bangkok Rock Climbing Club (Tel: 0 2434 6100, 0 2435 5797) can furnish you with details of climb sites wherever you are travelling in the kingdom, including artificial practice walls in Bangkok.

Some of the best locations for rock climbing are in the central regions near Huai Kha Khaeng Wildlife Sanctuary in Uthai Thani Province, or in the spectacular limestone mountains that run through Kanchanaburi, Phetchaburi and Prachuap Khiri Khan.

On the East Caost and easily accessible from Bangkok are sites in Chon Buri. The spectacular coastal cliffs of Railay Beach in Krabi are the climbing focus of the South, with further pitches to be found on some of the islands.

Climbing is a technical sport. You should not go alone, especially if you are a beginner. The discipline is safe if you use first-class equipment, go with an experienced guide and teacher who shows you how to practice safe climbing, and if you follow safety procedures.

As well as safety issues related to climbing, make sure you protect yourself from the sun. It is easy to get burned if you are on an exposed rock for long periods. Sunblock is essential.

Tham Lumphini Suan Hin is in Kaeng Khoi District with a length of 1,800 metres. It is the longest cave in perfect condition of Saraburi that has occured from the natural underground water. Along the route, visitors will have to climb down for 25 metres and walk through a pool of water, mud and sand as well as climb the fallen rocks. Throughout the route, visitors can see the distinguishable geological characteristics and beautiful stalagmites and stalactites. It takes a 3-4 hour journey. Moreover, in the area nearby, there is a bas-relief of a Bodhisattva in the Dvaravati style of cave art. Thailand has 96 national parks, 100 wildlife and non hunting sanctuaries and 65 forest parks, which together make up a full 13 percent of land area. The park system, managed by the Royal Forestry Department, provides the visitor with easy access to the country’s nature reserves, from the mountain pine forest of the North to the southern rainforests to the spectacular coral and marine life off both coasts.

Some of the wildlife and non hunting sanctuaries adjoin one another. Most of the parks are accessible by road, offer simple accommodation and charge a small admission fee. Trekking is one of the most popular outdoor activities enjoyed by visitors of all ages. While trekking you can soothe your mind and spirit in the fresh air and stunning scenery of Thailand's undiscovered wilds, and get a comprehensive aerobic workout at the same time. Treks can range from a single day light excursion to physically challenging adventures of a week or more.

Trekking in Chiang Rai
The trekking area in Chiang Rai covers Amphoe Mueang, Amphoe Mae Suai, and the banks along the Mae Kok River. Prices include guide, basic meals, transportation, accommodation, boat, and elephant. Different prices depend on the condition of accommodation, food, vehicle, insurance etc.

Trekking Advices
1. Trekking alone or with unauthorized tour guide/ operator is not recommended.
2. Trekker is advised to contact an authorized tour operator who provides: brochure with detailed information on trekking program, prices, accommodation, transportation; well-trained guide and licensed by TAT; and advice on how to get ready for trekking including necessary trekking accessories.
3. Some trekking guides may encourage customers to try a sample of opium, or make a side trip into Myanmar. These sound very exciting but any of these can be very dangerous. Taking narcotics is illegal (may lead to imprisonment) and smoking opium may lead to death. Take a moderate easy 1.5 Km. hike along the interpretive nature trail. Your guide will show you many trees and plants and describe their uses as food and medicine for humans and animals alike. The Milky tree for instance, is the provincial tree and its wood is used to make furniture. Several signs along the Nature Trail identify orchids, trees, birds, butterflies and animals by their botanical and common names.

Thailand has some of the most exciting gamefishing sites in Asia especially along the Andaman seacoast of Phuket and Krabi provinces. Marlin, sailfish, tuna, huge garoupa and every kind of shark imaginable are a boat ride from shore. Phang-nga Bay plays host to some of the rarest species of aquatic life in the world, including the rare swimming iguana.

Over the past 15 years, deep sea fishing competitions have grown in size and popularity with Phuket and Krabi as centres for a growing fleet of contenders. Tournaments are especially popular during the calm season between September and Mat when contenders reel in record catches of sailfish, marlin, wahoo and barracuda. Major game fishing contests are run according to the rules of the International Game fishing Association which mandate a “catch and release” requirement for sharks, underweight fish, and billfish such as marlin and sailfish.

For game fishing, the twin islands of Racha Yai and Racha Noi, some 50 Minutes out of Phuket, offer some of the best local fishing to be had. Sailfish, black, marlin, wahoo and tunas make this, along with excellent snorkeling, a good choice for the novice and experienced angler alike. Power boats are also available for charter for deep-sea fishing expedition out of the Andaman Sea resorts of Phuket and Krabi. Power cruises come fully equipped with fighting chairs and heavy tackle. For those who just want to go along for the ride, the scenery is as breathtaking as the activities.

In Pattaya, the Bang Saray Fishing Lodge arranges boat, tackle, and guides for reasonable fees. In the rocks south of Pattaya lurk species native to the Gulf of Thaialnd: red snapper, yellow jack, bonito, black-tipped sharks. Cobia and giant garoupers.

Thailand’s national parks and wildlife sanctuaries are some of the best and most extensive in Southeast Asia, and although abundant wildlife is found everywhere in the kingdom, they are the best places to see rare and protected species. Almost all parks have on-site accommodation and food, trails of varying levels of difficulty, and many organize trips, recreational and educational activities.

Huay Kha Khaeng and Thung Yai Naresuan wildlife sanctuaries in Uthai Thani and Kanchanaburi provinces respectively are two of the best places to start. They contain such magnificent creatures as bears, Leopards, tigers, elephants, tapirs, deers, gibbons, monkeys, macaque, guars, shy forest ox, and banteng, or wild red cattle.

Khao Yai National Park, three hours from Bangkok, is another excellent nature study site, with many research projects currently underway on creatures such as gibbons, tigers and hornbills. Khao Khieo Wildlife Sanctuary in Chon Buri Province has an open zoo which makes its wildlife particularly accessible. Species include guar, dusky languor, barking deer and brow-antlered deer. In one of the largest aviaries in the world, it also has the sarus crane and black-necked stork, which it is hoped will one day be reintroduced to the wild. In Kaeng Krachan National Park, the country’s largest pristine forest, there are superb walking trails around a 36 kilometre road, and treks of up to two weeks can be organized. Be prepared for some truly inspiring trees, 70 metres tall and more. Where the forest is open, it is like being inside a living cathedral.
